Monday~ Homemade Mac & Cheese, Green Beans and Fruit
Tuesday~ Santa Fe Chicken w/ Rice, Salad
Wednesday~ Hashbrown Casserole*, Eggs, Bacon, and Fruit
Thursday~ Potato Soup, Salad and Fruit
Friday~ Enchilada Casserole*, Salad
Saturday~ Pesto w/ Chicken, Rolls and Fruit
*I make a double batch of this recipe and freeze the second one for a meal later in the month or next month. By doing this I almost always have a meal that is homemade in the freezer ready to go and that helps on those days I just don't want to cook or don't have time to cook. (Or the days I totally forgot to make dinner and its almost bed time....)
